Cheesy Chicken Enchilada Recipe

Hey friends! I wanted to share this so delicious ooey gooey Cheesy Chicken Enchilada Recipe with you all! It is SUPER easy to make and one of the most tastiest dishes I’ve made to date! It’s one of Adam’s new favorites!

Ingredients:

  • Shredded Chicken
  • Shredded Cheese
  • Flour or Corn Tortillas
  • Enchilada sauce
  • Sour cream
  • Parsley

Step 1:

Preheat oven to 350F. While oven is heating, cook chicken in a skillet on the stove. Once chicken is fully cooked, shred/cut it up.

Step 2:

Return shredded chicken to skillet and pour about 1/3 cup of enchilada sauce over the chicken.

Step 3: Add in sour cream and parsley. Stir until mixed.

Step 4: Once sour cream and parsley are fully mixed, turn off heat and add in shredded cheese. (Anywhere between 2 and 2/12 cups, depending how cheesy you like it!)

 

Step 5: Spray baking dish with nonstick cooking spray and pour enchilada sauce to cover the bottom of the dish.

 

Step 6: Spoon sauce onto tortilla and add chicken mixture.

 

 

Step 7: Roll up tortillas and place face down in baking dish. Pour remaining Enchilada sauce over rolled tortillas, spreading evenly.

 

 

Step 8: Top with more shredded cheese and garnish with parsley.

 

 

Step 9: Cover with tin foil and bake in oven for 20 – 30 minutes, Remove the foil for the last 10 minutes of cooking.
