Mama’s Potato Salad
Memorial day is right around the corner. What is better than serving up some hot dogs and potato salad? Because well, carbs! Yes! I wanted to share with you one of my favorite recipes from my Mama. That would be her potato salad. It’s a yummy side dish for any event or holiday!
Ingredients:
3 large potatoes
Celery 2 large stalks (about 1 cup)
4-5 diced baby dill pickles
6 tbsp. Mayo
4 tbsp. Mustard
Oregano
Garlic Powder
Dill
Salt
Pepper
Paprika
Directions:
Peel Potatoes and cut into large chunks. Rinse potatoes with water and place in large pot filled with cold water (My mama swears by this). Turn pot with potatoes and water on boiler and begin to boil potatoes. Potatoes should cook for about 12 to 14 minutes. Cook until soft. Once potatoes are soft, drain and place in the refrigerator to cool. Should take about 45 to 65 minutes.
While potatoes are cooking, slice and dice celery and pickles.
Once potatoes are cooled, add in celery, pickles, mayo, garlic pepper, oregano, dill, salt, pepper , and turn over in a large dish lightly (You don’t want the potatoes to become “mashed” potatoes”. At this point the dish should be nice and creamy.
I like to add the mustard in last, give it one last turn over with a spoon, then sprinkle paprika on top! Sooo good!
